Honors 231 A- Animals, Environment, Food, and Justice
Course Description: "How do we understand the ethical and political dimensions of the food system? How does animal agriculture operate as a dominant institution fraught with complex interspecies social relations? What are the impacts of animal agriculture on humans, animals, and the environment and what movements for justice are working to mitigate these impacts? This course explores issues of justice for humans, animals and the environment in animal agriculture used primarily in the United States."
This course was absolutely fantastic! Katie Gillespie was a wonderful professor and, while I was not a fan of the discussion-based format of the class, she did an excellent job at making sure everyone felt included during our class discussions. The material was engaging and relevant, especially to me as a vegetarian, and encouraged me to look closely at my own diet and actions in relation to food products and animals. Because of this class, I want to try to cut out even more animal products from my diet, although I don't think I'm ready to become completely vegan, and try to eat in a way that that is better for the environment.

My final paper for the class is included below. I decided to research the topics of selective breeding, genetic modification, and in-vitro meat production as ways to produce different types of meat, and the pros and cons of each. This was a surprisingly engaging paper to research, and at a length of 15 pages is easily the longest paper I have ever written.
